Appearance -16.5 (H2O), [α] D 其mp为175℃, 分解温度175℃, 等电点5.07, [α] 25 L-半胱氨酸是含硫非必需氨基酸。 在生物体内, 由甲硫氨酸的硫原子置换丝氨酸的羟基氧原子并经膀硫醚而合成。 L-半胱氨酸可生成谷膀甘肽, 参与细胞的还原过程和肝脏内的磷脂代谢, 能保护肝细胞不受损害, 并能刺激造血机能, 增加白细胞、促进皮肤损害的修复。 +6.5 (5mol/L, HCl)。 白色结晶或结晶性粉末, 微臭, 味酸,易溶于水、氨水、乙酸、微溶于乙醇、丙酮、乙酸乙酯、苯、二硫化碳、四氯化碳。 对酸稳定, 而在中性或微碱性溶液中易被空气氧化成胱氨酸, 微量铁及重金属离子可促进氧化。 其盐酸盐较稳定, 故一般都制成盐酸盐。
