Appearance 略带粉红色彩的浅棕色粉末。有辛辣和涩味。作为商品，也有配成水溶液后用二氧化硫防腐的。0.1%溶液的表面张力为3.58Pa(pH3.0～7.0)或3.82Pa(pH9.0)。耐热性强，在pH3～7水溶液中加热，不会变色或发生变化。起泡性强，可形成细小、持久的泡沫。溶于水、乙醇和稀乙醇，不溶于丙二醇及油脂。1%水溶液的pH值为4.5～5.5。
